HOW TO MAKE A PARFAIT

INGREDIENTS

Yoghurt:

- Whole Milk
- Cultures
- Date Syrup (sweetener)
- Vanilla Extract

Granola:

- Oats
- Almonds
- Walnuts
- Honey
- Extra Virgin Olive Oil
- Vanilla Extract
- Salt

HOW TO MAKE

1. MAKE THE YOGHURT

Fill an InstantPot with two liters of Whole Milk. Boil (~45 min.). Allow to cool to between 90 and 110 degrees. This will take hours in the open air. It is best to place the pot in an ice bath which will cool the milk in about twenty minutes. Once the milk is cooled, add the cultures or a dollop of plain yoghurt and stir. Select the Yoghurt setting on the InstantPot. Milk and cultures will pressure cook together for 8 hours. After 8 hours, add a healthy amount of Date Syrup and Vanilla Extract and stir. When it's all homogenous, place the Yoghurt in the refridgerator to cool


2. MAKE THE GRANOLA

Combine a pound of oats, a handful of chopped almonds, and a handful of chopped walnuts in a mixing bowl. Add a healthy amount of salt. Pour in Olive Oil until the mix is moist, stirring to cover the whole mix. Pour in Honey until the mix is sticky, stirring as you go. Finally, add a splash of Vanilla Extract for flavor. Heat the oven to 275 degrees. Pour granola mix onto a cookie or baking sheet and tamp with a spoon until flat and relatively smooth. Cook the granola mix for 14 minutes. Remove and stir. Cook for another 14 minutes or until dry and crunchy. Allow granola to cool in the open air for an hour or so.


3. CHOP STARBERRIES

Chop Strawberries on a cutting board with a pearing knife. It's best to quarter the Strawberries vertically and then chop into triangular segments laterally. You want enough strawberries to cover the bottom of the bowl about 1.5 to 2 cms high. With large Strawberries, you need two to three. With small or medium Strawberries, you can need as many as eight.


4. MIX TOGETHER

Put the Strawberries in a bowl. Cover Strawberries with Yoghurt until you can't see the fruit any more (usually about 2 cms thick. Dish out enough Granola to completely cover the Yoghurt. Stir the mixture vigorously to break down any chunks of Granola. Bless the Parfait you have just made and eat it.
